In some cases, copper is sandwiched between layers of conductive aluminum and then bonded together with a stainless steel exterior. The term “ply” describes the numbers of layers of metal in a pan’s cladding — popular varieties include tri-ply, 5-ply, and 7-ply. Sometimes these pans may have a thin copper finish for aesthetic purposes. 
  3. Copper Bottom: This refers to cookware in which the interior and sides are made with a non-copper metal, while the base of the pan features a layer of copper for conduction. 
  4. Faux Copper Cookware: For those who want the look of copper without the upkeep or price tag, there are many cookware sets available with a copper-esque finish that don’t actually contain any genuine copper. Oftentimes these pots and pans are ceramic nonstick, meaning they are made from more inexpensive metals such as aluminum and coated in a nonstick finish. However, you lose the signature conductivity that copper is famous for. But if you’re just here for aesthetics, this is a great way to get the copper look without shelling out the copper money. 

Thickness

When it comes to copper, thickness is key. A pan that’s not thick enough won’t perform well and won’t hold up over time. But a pan that’s too thick will make the copper less conductive. The sweet spot is right between 2.5 millimeters and 3 millimeters thick. 

Finish

Copper cookware generally comes in two finishes: hammered or smooth. Hammered copper cookware is a classic look, but really makes no difference in the performance of the pan. And while hammered copper cookware is usually shiny, smooth copper cookware may have a matte or shiny finish. 

Another thing to keep in mind when it comes to the look of copper is that exposed copper will patina with age, meaning it will form a brown or green film, causing the pan to darken overall. For copper aficionados, this is actually desirable because it’s the sign of a truly well-loved pan — and it even improves its performance.

The only cons Alexandra found were that the copper discolored after use, creating a type of patina, which some might find not as attractive as the original mirror finish. With a copper cleaner or baking soda solution, the exterior can be restored to its original luster.

Best Budget Set: Lagostina Martellata Tri-Ply Copper Cookware Set

Another top cookware brand, Lagostina, is well known for constructing quality products at an affordable price, and this set is a demonstration of just that. Including two skillets, two covered saucepans, one stockpot, and one covered saute pan, this is quite a comprehensive set.

On the lower end of the price spectrum, these pots were reasonably similar in many of their characteristics to other models on our list, from heat conduction to cleaning and care. They were a fraction of the price of the similarly designed Viking set, making these a win in our books. The saute pans perfectly cooked fish during testing without overcooking, and the pan’s edges are high enough to prevent splatters from butter or sauce.

“This is the type of cookware I feel comfortable using everyday,” says Alexandra. “It’s durable and thoughtfully built, but not so pretty that I would worried about dinging it up if I used metal instead of plastic in it.”

Most Attractive: Ruffoni Historia Copper Cookware Set with Acorn Knobs

While not a key component of copper cookware, the tool is undoubtedly prized for its beauty, and the Ruffino set combines beauty with a solid build. Bright gold-colored brass handles and lid knobs adorn these already sumptuous copper pots and pans to make for a stunning display when presented at the dinner table or on the stovetop. Unfortunately, the set is relatively limited, including one fry pan, one covered saucepan, one covered chef pan, and a stockpot with a lid.

During testing, the saucepan worked wonderfully to heat and cool as needed while making caramel, a notoriously tricky candy. Alexandra recommends caution when cooking for extended periods, as the brass handles heat up when cooking, making it difficult to stir or hold the pan without an oven mitt. 

Their acclaim is also to their detriment, as Alexandra found that she was a bit hesitant to take these precious pots out to cook with them for everyday use. “I was concerned that I would damage them or get them messed up.” Indeed, these were the only pots that got scratched when used.

Clean and care are two other issues worth noting. Hand washing and drying are vital in keeping these pots and pans looking their loveliest. Perhaps these are best used for special occasions and decorative serving, or if you have the time to give this cookware extra love and attention.

This 10-piece set from Gotham Steel includes two covered saucepans, two frying pans (one covered), and one stock pot with stainless steel insert. Alexandra says, “This set would be great for a newbie, with many of the basic cookware pieces included.”

Boasting an “award-winning coating,” the pans don’t require any additional fats to prevent sticking, a real win for those looking to be more health-conscious. It’s important to note that this set does not contain any genuine copper — it’s made primarily from aluminum and coated with a nonstick coating and a copper-colored finish, all of which makes it ideal for the cook who wants the copper look without the tedious maintenance and hefty price tag. However this set will not provide the same heat-conductivity benefits that are signature to genuine copper cookware.

This set is dishwasher safe and easy to maintain, a huge bonus, especially in a category that requires extra attention to keep looking shiny and new. Alexandra liked that this set balanced value with quality, on the lower end of cost but equal to some higher-end models.

Lighter weight than some of the other sets, Alexandra found that these were more comfortable to handle and less clunky than some fully copper models. These were ideal for getting a quick breakfast prepared or leaving on the stove for pan-fried salmon for dinner with even and fast heating.
